Description

No trip to Gozo is complete without a taste of traditional Ġbejniet; delicious, round white cheeselets made from sheep’s or goat’s milk, dried in special, ventilated boxes. A ġbejna that doesn’t dry properly (because of wind & humidity) is subsequently preserved in wine vinegar & crushed pepper, to last months. It’s a testament to the mindset of the Maltese population of yore, which used to abhor waste.
